INTRODUCTION
Pre-made gently cooked diets occupy the space between traditional kibble and raw: cooked enough to address the food safety concerns that surround raw feeding, but processed less aggressively than extruded kibble. For pet parents who want fresh, whole-food ingredients without the handling considerations of raw, gently cooked is often where they land.
This category has grown rapidly in the last decade, and with that growth has come a wide range of products, manufacturing approaches, and quality standards. Some gently cooked brands are operating with the same rigor as the best kibble manufacturers. Others are essentially scaling up a home-kitchen approach with limited testing infrastructure behind them. The label "gently cooked" tells you almost nothing about which kind of operation produced the food in front of you.
GLOSSARY
What Gently Cooked Actually Means
The term "gently cooked" does not have a regulatory definition. It is a marketing descriptor used to distinguish these products from extruded kibble and raw. In practice, it usually refers to whole-food ingredients that have been cooked at lower temperatures than extrusion. This is often through methods like sous vide, steam cooking, or low-temperature oven cooking. The food is then either refrigerated, frozen, or in some cases shelf-stabilized through retort processing.
Commercial Cooking Methods

The cooking step matters because it is the primary food safety control for this category. Unlike raw, gently cooked diets are not relying on high-pressure processing (HPP) or careful sourcing alone to manage pathogen risk. They are cooking the food. However, "cooking" can mean different things in different facilities.
A sustained hold at temperatures known to eliminate Salmonella and Listeria is meaningfully different from a brief surface sear on a product that is still essentially raw inside. Both can be legally marketed as gently cooked.
This is the first place where manufacturer transparency matters more than the label claim. Brands that take pathogen control seriously can tell you what internal temperature their product reaches, for how long, and whether they validate that kill step with finished-product testing. Brands that cannot answer those questions are not necessarily unsafe, but they are asking you to trust them on faith.
MYTHS
One of the most common assumptions about gently cooked food is that it is automatically safer than raw. That is sometimes true and sometimes not. A well-run raw operation using high-pressure processing (HPP) and rigorous finished-product testing can produce food with a lower pathogen load than a sloppy gently cooked operation with no validation. Several factors determine actual food safety in this category:
A product cooked to a sustained internal temperature of 165°F for the appropriate hold time has had its pathogen load meaningfully reduced.
A product that has been seared or partially cooked has not.
The point at which a product is most vulnerable to recontamination is after cooking, before packaging.
Operations that cook food in a single batch and then transfer it to packaging in an open environment introduce risk that is not present in operations using sous vide or retort, where the food is cooked inside its final packaging.
Gently cooked food is usually shipped frozen or refrigerated, which means it depends on the shipping process to stay within safe temperature ranges.
Brands handle this differently. Some ship with dry ice and guaranteed transit times, others use gel packs and hope for the best.
Asking about cold-chain practices and what the company's policy is when a product arrives thawed is reasonable due diligence.
The gold standard is regular testing for Salmonella, Listeria monocytogenes, and E. coli on a finished product before it ships, with hold-and-release protocols that prevent contaminated batches from reaching customers.
Not every gently cooked brand operates this way. The ones that do are worth knowing.
Evaluation
Gently cooked commercial diets are a different product category entirely from kibble, with their own specific considerations worth understanding before choosing a brand. However, the same foundational evaluation principles apply:
- Look at the AAFCO statement
- Understand the life stage designation
- Research the manufacturer's quality & testing standards
Fat Content Deserves a Closer Look
One feature that distinguishes many gently cooked diets from kibble is fat content. Fat is calorically dense, palatable, and inexpensive to include, and many gently cooked recipes lean into it heavily. It is not unusual to find gently cooked products running 40-50% fat on a dry matter basis, particularly those marketed around recipes that emphasize meat-forward ingredient lists.
For most healthy adult dogs, a fat range of roughly 10-20% on a dry matter basis is appropriate, or under approximately 6 grams of fat per 100 kilocalories.
Higher fat levels can be appropriate for working dogs, performance dogs, or dogs with very high energy demands, but they are not appropriate for the average pet dog living a moderate lifestyle.
This matters more than it seems.
HIGH-FAT DIET RISKS
High-fat diets are a well-documented risk factor for pancreatitis, particularly in breeds predisposed to the condition. They contribute to weight gain when fed at standard portion sizes. And for dogs with a history of GI sensitivity, hyperlipidemia, or pancreatitis, they can be actively problematic.
A dog who tolerated a moderate-fat kibble may not tolerate a high-fat gently cooked product, even when both are nutritionally complete on paper. The takeaway is not that gently cooked is too high in fat as a category. It is that fat content varies widely within the category, and matching the product to your dog matters.

For dogs requiring genuinely low-fat diets, post-pancreatitis, hyperlipidemia, lymphangiectasia, or certain GI conditions, the target is under 8% fat on a dry matter basis or under 2.5 grams per 100 kilocalories.
Almost no commercial gently cooked diet hits this threshold without being a prescription therapeutic product. This is worth knowing if your dog has clinical reasons to avoid high-fat foods and is worth consulting with your veterinarian or a veterinary nutritionist if your dog requires this level of restriction.
Veterinary nutritionist Dr. Danielle Conway has seen many patients that are placed on an ultra low-fat diet for a single incidence of GI upset that was labeled as "pancreatitis" without a full workup. While this is not the wrong course of treatment, the dog does not need to remain on an ultra low-fat diet for life.
Ingredient Sourcing & Human-Grade Designations
"Human grade" is more of a facility and handling designation than a measure of nutritional quality. The same framework for kibble applies in the gently cooked category, where human-grade claims are often featured prominently in marketing. There are a few category-specific considerations.
Human-grade certification in gently cooked is more common than in kibble, partly because the manufacturing process of cooking whole-food ingredients in batches adapts more easily to human-food facility standards than extrusion does.
Some gently cooked brands do operate full human-grade facilities, and that is a legitimate quality marker as far as it goes. It is worth asking whether the entire facility is human-grade certified, or whether only the ingredients are sourced from human-grade suppliers. These are different claims with different meanings:
A facility that meets human food production standards has cleaning protocols, allergen controls, and traceability requirements that go beyond standard pet food manufacturing.
A facility that simply sources human-grade ingredients does not necessarily operate under those protocols.
Gently cooked products that emphasize muscle-meat-forward, human-grade-only ingredient lists are often skipping the most nutrient-dense parts of the animal, such as organs, connective tissues, and certain fats, in favor of cuts that look appealing on a label. From a nutritional standpoint, this is sometimes a step backward even when it photographs well.
Macronutrient Balance & Nutrient Verification
Relying on whole foods alone to meet all nutrient requirements sounds appealing, but it runs into a real problem: the nutrient content of whole foods is genuinely variable.
Two chicken livers from two different birds can have meaningfully different vitamin A, copper, and B-vitamin content depending on the bird's age, what it ate, where it was raised, and how the liver was handled and stored. The same is true for muscle meat, organs, eggs, fish, and produce. Seasonal variation, geographic variation, processing variation, and storage time all move the numbers.
WHY THIS MATTERS
Dogs have specific minimum and maximum nutrient requirements that need to be met consistently, meal after meal, for their entire life. Even modest deficiencies or excesses sustained over months can cause real clinical issues, such as copper-associated hepatopathy, zinc-responsive dermatosis, vitamin D toxicity, or calcium-phosphorus imbalances during growth.
Reputable gently cooked brands handle this by testing incoming ingredients for nutrient content rather than assuming a textbook value.
When a batch of liver comes in low on a given vitamin, or a batch of muscle meat is high in fat and low in protein compared to spec, they adjust the formulation or supplement to fill the gap.
That is where added vitamins and minerals come in. Not as a sign of a low-quality diet, but as the tool that makes consistent nutrient delivery possible across natural ingredient variation.
A gently cooked diet without any added vitamins and minerals is either relying on luck, relying on extremely tight ingredient sourcing that most companies cannot actually do, or quietly running outside of AAFCO ranges in ways the label does not disclose.
This is an area where seeing supplemental nutrients on the ingredient list is a sign the company is doing the work, not a sign that they are cutting corners.
It's worth asking whether nutrient analysis is run on the finished cooked product or calculated from raw ingredients before cooking. Calculated values overestimate what is actually in the bowl because cooking degrades some nutrients, particularly some B vitamins and certain antioxidants.
A company doing finished-product nutrient analysis is operating at a higher standard than one relying on calculated values from raw ingredient databases.
MONITORING
Caloric Density and Portion Size
Gently cooked diets typically run 70-75% moisture, which means they are far less calorically dense than kibble on a per-cup basis. This sounds like a minor point, but it shows up frequently in clinical practice as a feeding error.
When pet parents transition from kibble to a gently cooked product, the volume in the bowl looks substantial. Two cups of gently cooked food looks like a real meal. But once moisture is accounted for, that volume may contain meaningfully fewer calories than the dog was getting from a smaller portion of kibble.
The result is unintentional underfeeding: dogs who lose weight on a transition not because the food is inadequate, but because the visual cue of "a full bowl" is misleading.
The opposite happens too. A dog accustomed to seeing a small portion of kibble in their bowl may be served what looks like a generous portion of gently cooked food, when in reality the calories are appropriate.
Pet parents who feed by eye rather than by weight or label-recommended amount can drift into overfeeding without realizing it.
The practical fix is to feed by weight using a kitchen scale, particularly during the first few weeks of any transition, and to monitor body condition score every few weeks. The dog’s body score condition tells you whether the portion is right. The bowl does not.
When Gently Cooked Works Well
Gently cooked can be an excellent choice for dogs whose pet parents want fresh-food feeding without the handling and food safety considerations of raw. It tends to be highly palatable, which makes it useful for picky eaters, dogs recovering from illness, or dogs whose appetite has declined with age. The high moisture content supports hydration, which is meaningful for dogs prone to urinary issues or who are simply poor drinkers.
The price point reflects something real. Gently cooked is meaningfully more expensive than kibble, and that cost generally reflects the actual cost of fresh-ingredient sourcing, lower-temperature manufacturing, cold-chain shipping, and shorter shelf life. For households where the budget supports it, this is a legitimate choice that does not require a fresh-food-or-nothing philosophy to justify.
There are situations where it is worth thinking carefully:
Dogs with pancreatitis, hyperlipidemia, or fat sensitivity may not be well served by the higher-fat formulations common in this category. Matching the product to the dog matters.
Large-breed puppies have specific calcium and phosphorus requirements during growth, and most gently cooked brands do not formally carry the AAFCO large-breed growth designation.
Households with limited freezer space or unreliable cold-chain delivery may struggle with the storage and handling logistics that gently cooked feeding requires.
Dogs who do well on kibble, in households where the budget is already stretched, do not need to be moved to gently cooked to be healthy. A well-formulated kibble from a quality manufacturer is a legitimate diet.
